Rorschach Brewing Company is Toronto’s newest craft brewery, and will be opening its doors for a grand opening celebration on April 22, 2017. Located in the Leslieville and Beaches Area, Rorschach Brewing Company is the transformation of a 100-year-old home and boat warehouse, located directly across from Jonathan Ashbridge Park, and a 5-minute walk from Woodbine Beach. The building features seven stunning French doors on their ground level that open into the park, and a rooftop patio that seats 100.

Founded by three graduates of The University of Toronto’s Chemical Engineering department – Matthew Reiner, Christopher Ristevski and Mohan Pandit – Rorschach is the culmination of years of home-brewing, travelling, and exploring countless craft breweries and beer gardens. The three, by a chance encounter met Ben Ragan, a kombucha enthusiast with years of experience in fruit fermentation who has joined them on their journey. Rorschach is guided by a simple brewing philosophy that aims to craft beers that focus on complexity and drinkability. Simply put, these are beers that entice the palate and quench the thirst. Rorschach intends to focus on a few styles of beer, including hop forward and mixed fermentation ‘farmhouse-style’ ales, barrel aged beers and sours.

The food is a ‘tapas’ style menu that focuses on small, shareable portions that pair with their beer. The menu’s influence will be international, inspired by their globetrotting through Europe, Asia and South America. It will constantly be evolving – exploring new regional cuisines, but will always be inspired by a simple freshness and commitment to the traditional.
